Have turkey leftovers?  I do.   If you don't already have a favorite turkey soup, this is a good one.  I cook the carcass to make my own stock and go from there.  Source of this recipe was Taste of Home.  I think if you're not worried about the "white" theme, this would also be good with black beans.

Guess you now know what I'll be making today!  Nice to have something easy so I can do some sewing ....


White Turkey Chili

1/3 cup onion, chopped
1 rib celery, chopped
1 1/2 teaspoon vegetable oil
1 3/4 cups chicken or turkey broth
2 cups cooked turkey, cubed
1 can (15 1/2 oz) great northern beans, rinsed and drained
1 can white or shoepeg corn, drained
2 Tablespoons green chilies, chopped
1 teaspoon ground cumin
Monterey Jack cheese, shredded

In a large saucepan, saute onion and celery in oil until tender.  Stir in broth, turkey, beans, corn, chilies, cumin, and salt.  Bring to a boil.

Reduce heat; cover and simmer for 15 to 20 minutes.

Garnish with cheese
