Easy and Fun Mexican dinner fix

1 package corn or wheat tortillas
1 boneless beef roast (about 3 lbs)
2 T jamaican jerk spices
6 T taco seasonings
1 T sugar
shredded lettuce
shredded Mexican cheese
sour cream
salsa
Mix the spices, seasoning and sugar together thoroughly and rub onto the beef roast. Let stand 20 to 30 minutes, so that the meat absorbs the flavors. Bake in 350 degree oven for 1 hour for medium doneness (longer if more doneness is desired). Remove from oven and let rest for 10 minutes. Toast up both sides of the tortillas on a grill(about 1 minute each side). Thinly slice the beef and place on top of the tortilla. Top that with any combination of the lettuce, cheese, sour cream and salsa that you want. Makes 12 tortillas.
