For Ann, who missed our pot luck .... this originally came from a magazine ad -- I think it was the Wisconsin Cheese Board.


2 cups macaroni (or other pasta shape) -- uncooked

1 lb ground turkey
1 medium onion, chopped
1 cup celery, sliced
1 clove garlic, minced

1/2 cup ripe olives, sliced
16 oz tomatoes, canned -- undrained/cut up (I use diced)
4 oz green chilies -- drained/diced
2 tsp instant beef bouillon granules
1/2 tsp seasoned salt
1/4 tsp ground cumin
dash cayenne pepper (optional; I omit)

6 oz Muenster cheese, cubed
6 oz cheddar cheese, cubed

Preheat oven to 350 degrees

1.  Prepare macaroni according to package directions; drain.

2.  In medium skillet, combine ground turkey, onion, celery, and garlic.  Cook until turkey is browned.

3.  Stir in next seven ingredients and simmer 10 minutes.

4.  Combine macaroni, meat mixture, and cheeses.

5.  Pour into 3-quart casserole.  Cover.  Bake in a 350o oven until hot and cheese melts, about 20 minutes.

Garnish as desired.  Refrigerate leftovers.
Serves 6 ... depending on how hungry everyone is!
